Asparagus Pasta Salad with Italian Dressing Recipe

There is a quick and easy recipe for asparagus pasta salad that you can make with your own Italian sauce instead of buying one at the store.
INGREDIENT
FOR THE DRESSING:– 1/3 cup red wine vinegar– 2 teaspoons freshly squeezed lemon juice– 1 1/2 teaspoons minced garlic– 1 teaspoon sugar– 2 teaspoons dried oregano– 1/2 teaspoon crushed red pepper flakes, or more to taste (optional)– 1/2 cup extra-virgin olive oilFOR THE SALAD:– 1 pound asparagu– 2 1/2 cups uncooked pasta, such as penne or rotini– 2/3 cup sliced red onion– 1 1/2 cups diced tomatoe– 2/3 cup shredded Parmesan cheese, for serving

INSTRUCTION
MAKE THE DRESSING:- In a medium bowl, mix all the ingredients together with a whisk. Set the sauce aside.

Step 1
MAKE THE PASTA SALAD:- Remove the tough asparagus stems and cut each spear into 1-inch pieces.

Step 2
Bring a large saucepan of salted water to boil. Cook the pasta until al dente, 10–11 minutes, then add the asparagus and cook for 1 minute. After draining, rinse pasta and asparagus with cool water.

Step 3
Place pasta and asparagus in a large bowl. Mix in onions and tomatoes. After combining the pasta with the dressing, cover the salad with plastic wrap and chill for at least 3 hours or overnight.
