Chilled Ramen Noodle Salad with Peanut Dressing is a quick and healthy way to use a well-known noodle.
INGREDIENT
FOR THE SALAD:– 2 (3-oz.) packages ramen noodles, seasoning packets discarded– 1 cup shelled edamame– 2 cups finely shredded purple cabbage– 1 cup shredded carrot– 1/2 cup slivered almond– 1/4 cup sliced scallionFOR THE DRESSING:– 1/3 cup creamy peanut butter– 1/4 cup low-sodium soy sauce– 2 Tablespoons fresh lime juice– 1 Tablespoon sesame oil– 1/4 cup honey– 1 Tablespoon minced garlic– 1/4 teaspoon crushed red pepper flakes (optional)– 2 teaspoons sesame seeds, for garnishing

INSTRUCTION
MAKE THE SALAD :- Warm up a big pot of water. Add the ramen noodles and cook them the way the package says to. Set aside ¼ cup of the boiling water. Then, drain the noodles and put them in a big bowl.

Then put the onions, cabbage, carrots, almonds, and edamame in the bowl and toss them together.

MAKE THE DRESSING:- Use a medium-sized bowl to mix the peanut butter, soy sauce, lime juice, sesame oil, honey, garlic, crushed red pepper flakes (if you want), and hot water.

Whisk the ingredients together until the peanut butter is smooth. Add the sauce to the bowl with the vegetables and noodles, and then toss everything together.
