Breakfast Sausage Casserole combines your favorite breakfasts! Hash browns, eggs, cheese, and sausage crumbles. Try it as is or in breakfast burritos with salsa, sour cream, and cheese.
– 1 lb ground breakfast sausage– 1 small onion finely chopped– 1 teaspoon kosher salt– 4 cups shredded & thawed hash brown– 6 large eggs lightly beaten– 1 container (16 oz) cottage cheese– 2 cups shredded swiss cheese– 1 cup shredded colby jack cheese OR cheddar cheese

Preheat oven to 350°. Spray a 9x13 baking dish with cooking spray. Set aside.

Instructions
In a skillet pan over medium-high heat, sauté sausage, sliced onion, and salt until no longer pink. Crumble sausage during cooking.

Mix frozen hash browns, eggs, cottage cheese, and shredded cheese in a large bowl. Mix well.

Drain cooked sausage of fat. Add to hash brown mixture and stir. Place in prepared pan and distribute evenly.

Cook 45-50 minutes. Golden brown edges with a set, not "jiggly" middle. Serve after 5-10 minutes of pan cooling.
